Not every person can distinguish edible mushroom from inedible one. Perhaps, only units of individuals can list the names of at least 50 species among 2000 edible mushrooms. But when anybody hears the word «champignons» he got the concrete association — mushroom, edible, tasty, and beneficial.

Agaricus (species of champignons) includes 60 species of mushrooms, 2 of them are inedible (Agaricus meleagris, Agaricus xanthoderma) and 2 other can be cultivated (Agaricus bisporus, Agaricus bitorquis). In wild nature champignons fruit since May till October. They usually grow by groups.

How can we distinguish champignon from other mushrooms? It has pulpy hat up to 25 cm in diameter, cylindrical leg, it is white colored, a little grey matte, has white pulp, dense structure and pleasant odor. Free crowded gills have white color in the beginning of growth, and then, by ripening, pinkish and brown color. Do not confuse champignons with Death Angel false mushroom. The difference between these two mushrooms is the following: frill of champignon is attached to the edge of a hat, not to its leg.

Champignons are classified according to places of their natural growth.

  • Dace champignon (Agaricus campester) - grows on the muck soil, close to housing or farms, on the kitchen gardens, in parks and gardens;

  • Forest champignon (Agaricus silvaticus) - grows in mixed and coniferous forests;

  • Field champignon (Agaricus arvensis) - grows on forest glades, pastures;

  • Cultivated champignon (Agaricus bisporus) - the most popular cultivated champignon species

All these species are edible.

History of champignon cultivation starts in XVII century. The majority tends to position stating that Frenchmen were the first who invented the cultivation of this tasty mushroom. Other people state that the palm of leadership belongs to Italians.

But it is not so important, because during 3 centuries champignons become popular all around the world. Today these mushrooms are cultivated in commercial scale in tens of countries. In our days every Russian who has its own piece of land, can organize his own plantation of pulpy mushrooms, settle the production line and make profit.

Champignon cultivation — is the perfect chance for the peasants living in country and rural zone to improve their financial state. The profitability of such business can reach from 50 to 1000 percents. Of course, like any other business, this one requires investments, but it is easy to achieve the success through the competent approach.

For the successful cultivation of champignons the knowledge of mycology and technology process is needed. Today you can find a lot of literature on mushroom cultivation free. By experience every person comes to his own method, which depends on conditions and purposes of cultivation. If you want to achieve the better results — be ready to study and to experiment.

We just can praise champignons for their flavor and beneficial characteristics. Judge by yourself — champignon contains: cellulose, zink, vitamins D, E, PP, vitamins of B group, kalium, iron, phosphorus. No fats, no sugar, no natrium.
